Need Advice on performing a "Cut"...

Happy New Year! Let me say thanks in advance for any help anyone can offer.

I had a shoulder injury last February that put me back to where I started. I started off quite slowly to prevent re-injury and haven't had a relapse. I have been bulking up for the last 6 months or so and now I'm looking for any possible advice on cutting or performing a cut but I have been unable to find much information on this. Let me give you some basic information about my current workout and hopefully you might have some helpful insights.

I do my own sort of all-body workout every Sun, Wed & Fri. I spend about 2-hours in the gym and do traditional bench, decline, incline, dips, skullcrushers, lat pull-down, 3 different biceps exercises, squats, 2 different back exercises, 3 different ab exercises and a hip abductor exercise.

I do all of the upper-body exercises in the same fashion. I do either 3 or 4 sets in ascending order; starting with lower weight and higher reps & finishing heavy with less reps. I tend to take about 30 - 60 seconds between reps and about a minute or two between exercises.

After recovering from the shoulder injury I had to start from scratch, benching just 135 and I've finally made it back to 300. I'm 6'1" and 210 pounds and I'm ready to slim down and better see the results I've worked so hard for. I've just started doing HIIT cardio 2 or 3 times a week and the Abs Diet; which has worked for me in the past. Any advice on my lifting routine would be greatly appreciated. I utilize protein and creatine but don't really believe in any of the other supplements out there.
