| | | I totally forgot I made this thread! These sub-boards are kinda hidden away.
We made a taco pizza with whole grain crust, extra lean beef, and fat free cheese, hommeade salsa and peppers it gave me my fix. Any other suggestions? I'm open for your ideas |

| | | What about a mexican salad? You can use lettuce, black beans, baked vegetables, fat-free cheese and a light spicy dressing...that would be yummy |

| | | I like it all, I used to get the "special dinner" all the time:
1 taco, 1 chicken burrito, 1 beef tamale 1 chile relleno, 1 tostada, refried beans, rice, corn cake....a true "fat boy meal" as I used to call it LOL
I totally dig loaded nachos too...I'm thinking whole grain baked pita chips? |

| | | I got some whole wheat pitas from Wild Oats. I cut them in half, stuffed a ball of foil inside to hold them open and baked them on 350 for a few minutes. They make great taco shells |

| | | Do you like fajitas? If you use chicken and whole wheat tortillas with cooked with pepers and onions it would be healthy. Most mexican food I have ate is fairly healthy, as long as you use whole wheat chips, pitas, tortillas and don't smother them with fatening sour cream or yellow cheese. I rub chicken breasts with taco seasoning and cover them with salsa. Tastes great! |

| | | ehhh, whole wheat chips are not healthy, and if you use a whole wheat tortilla just look for one with a lot of fiber. Some tortillas are over 200 kcals and have only 3 or 4 grams of fiber which IMO is not that great. |

| | | Whole wheat chips theoretically could be healthy if there's not a lot of crap in them.
I looked at some tortilla chips made from just corn masa, water, lime juice and soybean oil. Very little sat fat and a decent amount of healthy fats. I can't see how these are unhealthy. Can anyone tell me what would be wrong with these?
I use Garden City wraps. They have 8 grams of fiber...and yes, they're over 200 cals, but that isn't bad if you work them into your plan. Given my high metabolism I can eat them all the time. |

| | | Chicken, barbecued and sliced to bits with spices
black beans
avocado
corn
tomato
hot sauce
some lettuce of choice, i even use spinach from time to time
maybe add some scrambled eggs if you're going all out. This can also substitute the chicken.
Splash salsa over the whole thing, on a good whole weat tortilla and bam. healthy and super super tasty.
edit: forgot diced onions.

| | | Hey i got a gnarly burrito recipe. you need chicken, onions, green peppers, jalapeno, wheat tortillas, black beans, and mozerella cheese.
get chicken cutlets and lightly cover them on both sides with these seasonings
Salt
Pepper
Red Pepper
Cumin
Basil( i'm sure cilantro would be a good alternative)
Paprika
and chili powder is optional
Saute these up, take them off and pull them apart like pulled pork. you can do this with 2forks. Ok, when your chicken is ready, get diced onions and peppers cut into juliander(strips) and saute these up. When this is done, get a tortilla and run it under water. pop the tortilla in the microwave for 20 seconds. when it is out, immediantly put the chicken, sauted veges, beans, and cheese on it. Rolled it up like a burrito and pop in in the oven at 500 till the tortilla hardens and browns over. | | | | Thread Tools | Search this Thread | | | | | Display Modes | Rate This Thread | Linear Mode | |
