1 cup eggwhite (250 ml)
1 cup raw oats (100g, dry)
1 cup PACKED dry curd cottage cheese (250 g)
1 heaping teaspoon baking powder
1/2 teaspoon salt
1 medjool date (or any soft date) -- optional
1/3 cup splenda
Blend/food process until smooth, bake in a waffle iron or as a pancake.
Makes four "servings"; (approx. four double-waffles in most waffle irons)
(roughly 20g carb and 20g protein per serving, almost no fat)

If you don't use dry curd, drain regular cottage cheese, and use 1 1/3cup, and omit the salt (dry curd is un-salted, reg. cottage cheese is salted)
i got this off another forum, so its not my recipe, but i hear its damn tastey, and you can re-toast them like an Eggo...good for on-the-go nutrition.
One of those and a piece of fruit would be pretty good pre-workout nutrition.
My wife made them yesterday and they are awesome. use a little honey or some syrup that doesn't have high fructose corn syrup, and it'd be a decent post workout meal. or pre workout meal for that matter.
My wife did the math on it - 21g protein and 23g carbs per serving with like 1g of fat. (no dates)
I'm bumping my own recipe. It really IS a very delicious waffle. The batter looks normal, and you would never guess there's cottage cheese in them.
Seriously guys, try these. They are that good. I had the wife make em again last night, and I picked up 100% pure maple syrup to avoid high fructose corn syrup. Of course I"ll only use a little, but post workout, simple carbs ain't a bad thing!
cottage cheese is very neccesary for its casein protein content.. low carb, and low fat. Casein is a slow digestive ingredient which doesn't make your insulin levels blow through the roof. Since its a very cheap comodity its well worth what it has in there... so therefore I suggest you keep it in the recipe.. Also forgot to mention is very high in glutamine.

Wow, these are GREAT, one of the best recipes Ive ever tried really. Doesn't take long at all to make and they are DELICIOUS. Also, I can't stand cottage cheese, yet you wouldn't even know that its in here! Thanks malk
No problem. they freeze well too, so we make 2-3 batches worth and they last a week or so...just depends.
we even reduced the splenda last time to 1/4 cup and they're still plenty sweet even without syrup (I have 100% pure maple syrup for when I have this as post workout nutrition)
how would you cook em /w a frying pan? just pour the mixture on top? I've never made pancakes before. substituting raisins for the date would be OK?
Something like a griddle would be best for pancakes, the high temperature is sorta needed. I myself have never tried on a regular frying pan, so I can't really help you out there. I'm sure raisins would be great as well, I should try that next time..
