Heart rate calculator?

To the HIIT pro's here, what do you guys use to check your heart rate when doing HIIT when your not on a treadmill, just outside doing it. Is it necessary to know your max. heart rate? Could it be effective if I sprinted as fast as I could till I could go no more, then do my 2-3 min light jog then sprint again?
