Beef Heart

I just bought a couple pounds of beef heart. I had never seen it before. It is very dark red, almost maroon in color. the butcher said, "yeah, I guess it would have the most protein, and cholesterol."

does anybody know about this beef part, real good for me while I am training?

Any cooking or preperation ideas? Should I just take a bloody raw bite? hehehe it is gnarly lookin!

thanks for the help if you know anything.

If not, I'll just fry or bake it and eat it for the experience.

Here is nutritional information for beef heart. As you suspect, it is high in protein and cholesterol. However, keep in mind that problematic cholestoral comes more from cholesterol that your body produces from fat intake rather than from cholesterol intake.

The way I would have it is yakiniku style, which is Japanese barbecue imported from Korea. Slice the meat thinly and grill it on each side, then dip it in a sauce made of soy sauce and sesame oil.

Here is a recipe you can use for the sauce:

* 1/3 cup soy sauce
* 3 tbsp mirin
* 2 tbsp sugar
* 2 tbsp sesame oil
* 1 tbsp sesame seeds
* 1 tsp grated garlic

Of course, you can use an artificial sweetener instead of the sugar.

My parents are pretty big into agriculture and they were telling me about a study on some new herb that could potentially replace sugar. It's some crazy kind of conversion. This is probably way off but it was something like a tablespoon to a cup some kind of drastic difference but the taste of it is almost identical to sugar.

I'm not sure I'll ask them tonight and do some research.

Anyone else heard of this?
