Need some advice on this workout schedule

I currently do 5 RPM's (spin classes)/1 personal training sessions which consists of mostly weights/1 rest day a week. I was thinking of doing 3 RPMS, 1 swimming session and 1 pump so that would be 3RPMs/1 PT/1 Pump class/1 Swim/1 Rest day a week.

I am just looking to maintain my weight and get a little more toned. I'm 5"3 (female) and around 59-60 kilos. What do people think?

I would go with the second option there. More variety to attack different muslce group.

Btw, to get more tone has to do a lot with dieting as well. What do you mean by getting toned? If you are trying to lose the bodyfat, then your weight will drop unless you are returning back to training OR beginning to workout. In either of those case, it could be possible to lose weight and gain strength. But in general, when you are "toning" up I am thinking of leaning out and that is losing body fat. In which case, you should be in a calorie defecit while consuming 130g protein per day.

To get good gain, it's not just excercise but Dieting and rest as well. Just my opinion but body-shaping is 50% diet, 30% excercising, and 20% rest.
